Ingredients:
1. European Cucumbers : 2 large (Alternative: Regular Cucumbers)
2. Greek Yogurt : 1.5 cups (Alternative: Hung Curd)
3. Flat-leaf Parsley : 1/4 cup
4. Fresh dill leaves : 1/3 cup
5. Tarragon leaves (Optional) : 2 tbsp
6. Olive oil : 1/4 cup
7. Freshly squeezed lemon juice : 3 tbsp
8. Red Onion (chopped) : 3 tbsp
9. Garlic : 1 clove
10. Salt : To taste
11. Freshly crushed black pepper : 1/4 tsp (Alternative : White Pepper Powder)
12. Cumin powder (Optional) : 1/4 tsp
For Garnishing (everything to taste):
1. Finely chopped red onions
2. Finely chopped cucumber
3. Finely chopped ginger (optional)
4. A drizzle of olive oil
5. Thinly sliced pieces of cucumber
6. A sprig of dill
Process:
1. Slice ends off cucumbers. Cut along the middle.
2. Scrape away the seeds and discard
3. Roughly chop up cucumbers and add to a blender
4. Add the yogurt
5. Add the fresh herbs - parsley, dill and tarragon
6. Pour in the olive oil and freshly squeezed lemon juice
7. Add the chopped onions and sliced garlic
8. Add cumin powder, crushed black pepper and salt
9. Blend everything to a smooth paste
10. Chill in the fridge
11. While serving, pour out in a bowl
12. Garnish with ingredients as mentioned above
13. Enjoy!
